Quick and easy !

As student, I tend to get stress easier. Different people has different ways to relief their stress. For me, the best way to relief stress was by cooking what ever I'm craving for. But, I am still young and have not so much experience in cooking. So I like to cook something simple recipe and what I like the most is 'Cucur Udang' or 'Prawn Fritters'.

Ingredients,

For the fritters:
  • 300 g plain flour
  • 2 tsp baking powder
  • tsp salt100 g onion, sliced thinly
  • 60 g carrot, finely shredded
  • 60 g Chinese chives, cut into 4 cm lengths
  • 300 g prawns, shelled and de-veined
  • 400 ml water

For the chilli sauce:
  • 12 fresh red chillies (240 g), sliced
  • 6 cloves garlic, sliced
  • 2 Tbsp sugar
  • 4 Tbsp white vinegar
  • 4 Tbsp tomato ketchup
  • 4 Tbsp water

Method:
  1. Filter flour, baking powder and salt into a mixing bowl. Add the carrot, onion, prawns and chinese chives. Then, stir in water and mix well.
  2. Heat the oil in a shallow pan on medium heat. Test the heat by placing a small drop of batter into the oil (if it sizzles, the oil is ready). Drop tablespoonfuls of batter into the oil, one by one. Fry until lightly puffed and golden brown on both sides. Drain well in a wire basket. Fry fritters in batches until all the batter is used up.
  3. Meanwhile, measure all the ingredients of the chilli sauce into a blender and blend finely. Transfer into a small bowl. Serve the fritters hot or warm, accompanied with chilli sauce.
Yummy ! It was so tempting !

Capo d’opera! - A Masterpiece!

Today we would like to share another new recipe from the land of the Grand Canal of Venice! Wuuu.. Sounds great, but it's cuisine are much greater than the name. Here we are, White Chocolate And Sour Cherry Semifreddo.

Yessss.. it might looks like an ice-cream but, no machine needed to make this ice cream-like dessert! Tart-sweet sour cherry jam beautifully offsets the creamy white chocolate in this dessert. For the best flavor, search out for white chocolate made from cocoa butter, not vegetable fat as is found in some brands coz it will be much cremier. *sslrrrpppp hahaha.

Here's the ingredients:

  • 1 cup cold heavy cream
  • 170g best-quality white chocolate, chopped
  • 4 large egg yolks, at room temperature
  • 1/2 cup granulated sugar
  • 3 Tbs. whole milk
  • 2 large egg whites, at room temperature
  • 1/2 tsp. cream of tartar
  • 1/4 tsp. table salt
  • 1/2 cup sour cherry jam, such as Morello

Direction:
1. Whip the Cream: Whipping heavy cream in a chilled bowl with chilled beaters keeps it very cold so it can reach its loftiest potential. Stop the mixer the moment the cream has reached stiff peaks.
2. Make a zabaglione: Beating the zabaglione ingredients over simmering water cooks them gently; don't let the bottom of the bowl touch the water, or the eggs may scramble. The zabaglione is done when it's thick and foamy and the beaters leave a ribbony trail when you lift them.

3. Make a Swiss Meringue: Gently cooking the meringue ingredients over the same simmering water streamlines the recipe and yields fluffy, glossy results. To prevent the eggs from overcooking once the meringue is glossy, continue beating it off the heat until very thick and billowy, like marshmallow fluff.

4. Fold together: When folding the components together, use a large silicone spatula and long, gentle strokes to preserve as much air in the mixture as possible. Stop as soon as no streaks remain.

5. Add swirls:
 If adding swirls of jam at the end, don't overmix lest you lose the effect; just one or two long strokes of the spatula should do it.

6. Freeze, then serve:
 Smoothing any wrinkles on the surface of the frozen semifreddo is easy to do with a warm knife or small offset spatula.

Anddd... wallaahhh !! There you go. A mouth watering semifreddo ready to be served :D


 Slice the semifreddo crosswise into 1-inch-thick pieces to serve.

DREAM CAN BE REALITY!

It’s sound a little bit funny if we said that one of us knew crème brûlée when she watched High School Musical. lol ^^v. Yeah! She's one of HSM fan!! No doubt. From that moment, her dream is to be master in making crème brûlée.*winkwink And now, she can make it with her eye closed. Hahaha. Only one eye not two okay. We searched what is the meaning of crème brûlée just now and we found this! Okay, let me summarize it to you. Crème brûlée actually is a French pronunciation. Its  also known as burnt cream. Crème brûlée is a dessert consisting of a rich custard base topped with a contrasting layer of hard caramel. Now you knew what is a crème brûlée so, we may proceed to the main part of this post.

The ingredients:

  • 600 ml of heavy cream
  • 1 1/2 teaspoons of vanilla extract
  • 5 egg yolks
  • 1/3 cup of sugar
  • brown sugar

Direction:

  1. Put a clean saucepan on a stove and turn into a medium heat
  2. Pour a heavy cream into the saucepan then the vanilla extract. Stir it in 5 seconds using a whisk and leave it but remember we don’t want to boil it, just heat it until soft bubbles begin to form at the sides of the saucepan.
  3. Put the egg yolks into the mixing bowl then the sugar. Stir gently in 15 seconds.
  4. Pour bit by bit the cream into the yolk mixture and stir constantly.
  5. Then, strain the mixture through a sieve into a jug to remove any grit. Use the blow torch to remove the bubble on top of the mixture.
  6. Pour the mixture straight into the ramekins. Next, pour enough hot water into the tray to reach half way up the ramekins.
  7. Place the tray into the oven for 30 to 40 minutes at 160 degree Celsius
  8. The half ready crème brûlée will look like a jelly. Cool it in the room temperature for 15 to 20 minutes then, chill it in the fridge for at least 4 hours
  9. Roughly one hour before you going to eat the crème brûlée. Layer up thin the brown sugar on the aluminium foil to dry it for about half hour.
  10. Sprinkle the dry brown sugar on top of each crème brûlée evenly.
  11. Quickly caramelize the top with the blow torch. Leave it for 20 seconds and repeat the step before.
  12. Lastly, leave it for 5 minutes just for the top to completely harden.
Here you go, a ready crème brûlée to impress your guest. :D

We know maybe some of you can't afford or forgotten to buy a blow torch. Don't worry! You can make this crème brûlée even you don't have a blow torch. Just don't lose your hope and keep trying. Hahaha. The other methods are you can use a spoon to remove the bubble in the step 5 and place the ramekins into the oven to it's highest position then turn on the broiler. Broil for 3 to 8 minutes and frequently rotate them so that they broil evenly.

Note: In step 4, you must make sure you are slowly incorporate the cream into the yolk mixture. Don't rush in this step because if you incorporate the cream too quickly, the egg may cook.

Last but not least, you can also put some fresh fruit on top of the crème brûlée such as strawberries, blueberries or cherries to decorate this dessert.

HEAVEN.

Olá! Today we would like to share to you how to make a homemade oreo ice cream. Why we chose ice cream? hmmm, because we love to eat ice cream very much!!!!!! more than other food in the world. Hahaha. :P Every time we ate ice cream we would dream that we already in heaven.*winkwink. Hahaha. We didn't expect that we had the same thought of the ice cream. :D Because of that, the best title for this post is HEAVEN we think. Opss! Without any delay, let's proceed on making an oreo ice cream. This is the easiest recipe to make an ice cream. There are no yolk no sugar no salt but only use:

  • 10 oreo cookies
  • 1/2 teaspoon of vanilla extract
  • 250 ml of double cream
  • 200 ml of condensed milk

Direction:
  1. Pour the cream into a mixing bowl and stir it using a whisk until it look solid.
  2. Add the condensed milk and vanilla extract into the bowl.
  3. On the other hand, put the oreo cookies into a sandwich bag and smash it using a rolling pin.
  4. Then, put the smashed oreo cookies into the bowl and mix the mixture for 30 seconds.
  5. Place the mixture in a closed container and chill it in the refrigerator at least 2 hours.
voila! the ice cream is ready to eat by us. Hahaha

Precaution due to this recipe, you must not leave the half ready ice cream mixture in the open area for a long time because the taste will become sour but you must chilled it into the refrigerator as soon as possible.

You also can put the chocolate syrup or any syrup that you like for the topping. If you prefer chocolate. don't worry you can add some chocolate chips instead of oreo cookies.

Now you can have you homemade oreo ice cream as easy as 1,2,3.

It's a first post !

 Hello everyone! Bon appetit can be define in English as 'let's eat' which can be greet every time before we eat which is, the greetings is from French. So as we are now in the month of Ramadhan Kareem, I (we actually! the blog is managed by a group of kmkn,fist uniKL's student of 14/15) would like to post about food. Hahahahah this page is good for madly food cravers like us. We going to share our first recipe, BAKED MACARONI. 

Here some Q&A session before we start our cooking class.

Q: Why baked macaroni ?
A: Because this is the food that I'm craving for T.T

Q: So why do you post it now? It's about One and a half an hour before iftar.
A: Heheh, it's not a big deal my darling. We can bake it for moreh or sahoor perhaps?

Q: Can we start our baking class and stop being ridiculous?
A: Off course dear -.-

Ok lets start,


Ingredients:
  • 250 grams of macaroni,
  • 250 gm margarine,
  • 250 gm large-diced onion,
  • 5 cloves of garlic - chopped fine,
  • 6 tomatoes - chopped fine,
  • A can tomato puree,
  • A can cream of mushroom,
  • A large bottle of chilli sauce,
  • A large bottle of tomato sauce,
  • 3 tablespoons herb mix,
  • 3 tablespoons black pepper,
  • 300 gm minced meat,
  • A small red capsicum - diced,
  • 500 ml fresh milk,
  • 700 gm sliced ​​cheese,
  • 3 eggs,A little water,
  • Pinch of salt
Preparation:
  1. Boil the macaroni untill it soft.Drain the water and set aside.
  2. Melt the margerine and saute onion and garlic until it become yellowish
  3. Add mince,chopped tomatoes and stir well. Keep up until boil.
  4. Then add cream of mushroom, tomato puree, chilli sauce and tomato sauce. Add water,pepper, mixed herbs and salt to taste.
  5. When the mixture is boiling, add milk and stir until well mixed. Stop the heat.
  6. Cool the mixture briefly, then add the eggs were stirred. Garnish the red capsicum.
  7. Spoon macaroni into a mold, pour a little sauce mixture and sprinkle with shredded mozarella cheese. Then bake at 200 degrees Celsius for 15 minutes.
There you go, our baked macaroni is ready to serve !
Sometimes when boiling macaroni, we forgot to add a little oil to prevent the macaroni from sticking. If this happens, don't worry. Here some tips for you to avoid the macaroni from sticking:


Sprinkle a little hot water on the macaroni and little oil or butter. Do not use margarine because the macaroni will be harden when cold.
